Little Scaxies
March 21st- all my boys absolutely LOVE it when I bake chocolate chip zucchini muffins! Josh calls our two boys "little scaxies" because they become instant vultures...they can't wait for the next bite. As a mom I love it when I can make something that they all love and enjoy so much. The recipe is from my mom and it is a keeper! Here is the recipe in case one of you wants to take a stab at baking them for your family:
MOM’S ZUCCHINI BREAD
1 cup oil
3 eggs
2 cups zucchini squash (approx. 3 small squash)
1 cup sugar
3 cups flour
½ teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
2 teaspoons vanilla
2 tablespoons flaxseed oil
1 small package of chocolate chips
Put 1 cup oil in blender; cut zucchini and add to blender a handful at a time; blend up to 3 cup level.
Add 3 eggs and blend.
Pour mixture into large bowl; add sugar and vanilla.
Sift flour, baking powder, baking soda and cinnamon together.
Add a half at a time and blend in with mixer until done.
Add chocolate chips; can add raisins and/or chopped nuts.
Grease and flour 3 small loaf pans; pour in equally.
Bake at 350* for 40 minutes and check with toothpick to see if done – usually they have to bake 3-5 minutes more. Enjoy!

Note – I have also started making these into muffins – yum! Use paper baking cups - fill each muffin tin ¾ way up. Bake at 400* (for approx. 18-20 mins. – check hw/toothpick to make sure. Love, Kristi
