We had a fun play day with Isaac Palmer, one of Isaac's little friends from Kindy. The boys had a blast together! Both Isaac's love laughing and entertaining eachother. Check out what they were doing in Hudson's cot. Ha!

We enjoyed one last delicious breakfast with the women from our ministry during this morning. The food was glorious and the ambiance was delightful as well. We had a lot of fun connecting with each other before the year comes to a close and people move back to the States.

Team Trip

 

 

 

 
Our team took a trip to Martinborough at the end of the school year. The boys particularly enjoyed playing with the bunny and guinea pig that were located in the backyard of the house we rented. Our first day was pleasant as the sun was out and it was warm and beautiful, plus the girls on the team cooked an amazing dinner for us all. The second day it rained off and on, but we still managed to get in some wine tasting in the midst of the showers. All in all, it was restful to get away from the city for a few days.

The boys loved being swirled around in our sturdy, green laundry basket. Isaac kept asking daddy to, "do it again!" and Hudson sang, "weeeeeeeeee!" the entire time.

A Few Pics From My Birthday

October 15th I celebrated my 36th birthday in style. Unfortunately, I didn't take many pictures, but I managed to snap a few while out with some girl friends. We had drinks and appetizers at my favorite wine bar, and then Josh took me out to dinner at our favorite local pub. It was an enjoyable evening celebrating with friends and family. My friends from home group also surprised me with a delicious chocolate cake and some dosh to buy new clothes, and Isaac and Hudson made me a chocolate cake as well. Another birthday celebrated successfully. :)

Vegetarian Cannelloni

Vegetarian Cannelloni
This is the first recipe I have posted but it is a complete winner. This is from my friend Sym. Yum City!

You need:

1 Packet of cannelloni
1 tub of cream cheese
1 head of silverbeet
1 small packet of cashew nuts
2 jars of tomato pasta sauce
1 small block of blue vein cheese
3 Table spoons of Olive Oil
Parmesan Cheese



1. Chop off the white stalks from the silver beet. Place in a pot and pour a jug full of boiling water over the silver beet and cover. Leave until you have finished the next stage.
2. In an oven dish, place the cannelloni after stuffing half each individual cannelloni with ream cheese and blue vein cheese.
3. Drain the silver beet. Add the cashew nuts and olive oil and use a stick blender to turn into a silver beet pesto.
4. Stuff into the remaining half of each cannelloni and place back into the oven dish.
5. Cover the stuffed cannelloni with the tomato pasta sauce.
6. Sprinkle Parmesan cheese over the top.
7. Cover with tin foil and cook at 180 degrees celsius for 20min.

This is a vegetarian dish that everyone will like because cream cheese is the best. If you are not into blue cheese, drop it. It is still yummy. Of course you could add some ham to this but then it would not be very vegetarian.
